Crispy Kimchi Pancake (Kimchi Jeon)

Korean kimchi pancakes are crispy, savory, and one of the easiest Korean comfort foods to make at home.
I love using Beksul Korean Pancake Mix because it helps create extra crispy Korean kimchi pancakes at home.
Ingredients
- 1 cup chopped kimchi
- 1/2 cup Pancake Mix, Korean Style By Beksul
- 1 egg
- 1/3–1/2 cup water
- 2 tablespoons kimchi juice
- 2 green onions, sliced
- 1 tablespoon cooking oil
Optional
- Chili pepper slices
- Cheese
- Shrimp or squid
Dipping Sauce
- 1 tablespoon soy sauce
- 1 teaspoon vinegar
- Pinch of chili flakes or sesame seeds
How to Make
1. Prepare the Batter
In a bowl, combine:
- chopped kimchi
- 1/2 cup Pancake Mix, Korean Style By Beksul
- egg
- water
- kimchi juice
- green onions
Mix until it forms a thick batter.
2. Heat the Pan
Add cooking oil to a frying pan over medium heat.
3. Cook the Pancake
Pour the batter into the pan and spread it thinly.
Cook for about 3–4 minutes until the bottom becomes golden and crispy.
Flip carefully and cook the other side for another 2–3 minutes.
4. Serve
Cut into pieces and serve hot with dipping sauce.
